Main Ingredients
- 1 large butternut squash peeled and cubed
- 2 medium beets peeled and diced
- 2 cups kale chopped
- 1 cup farro uncooked
- 1/2 cup pistachios shelled
- 1/2 cup feta cheese crumbled
Seasoning & Dressing
- 2 tablespoons olive oil divided
- salt to taste
- black pepper to taste
- vinaigrette or dressing for drizzling
Preparation Instructions
Preheat your oven to 400°F (200°C). Peel and cube the butternut squash, and peel and dice the beets. Place them on a baking sheet, drizzle with 1 tablespoon olive oil, and season with salt and pepper. Roast for about 30-35 minutes or until tender.
While the vegetables are roasting, cook the farro according to package instructions until tender. Drain any excess water and let it cool slightly.
In a large bowl, massage the kale with the remaining 1 tablespoon olive oil until it becomes tender.
Layer a bed of farro, topped with roasted squash and beets. Add kale, sprinkle with pistachios, and crumble feta cheese over the top. Drizzle with your favorite vinaigrette or dressing.
