Vegetable Stew
- 2 tablespoons olive oil
- 1 medium onion chopped
- 2 cloves garlic minced
- 3 medium carrots diced
- 2 medium potatoes diced
- 1 medium zucchini chopped
- 1 cup squash chopped
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon thyme dried
- 1 teaspoon rosemary dried
- to taste salt
- to taste black pepper
Prepare Ingredients
Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until fragrant and onion becomes translucent.
Add carrots, potatoes, and zucchini, stirring occasionally for about 5 minutes until they begin to soften.
Pour in diced tomatoes and vegetable broth, then stir in chopped squash. Add thyme and rosemary, and bring to a boil. Reduce heat, simmer for 25-30 minutes until vegetables are tender.
Taste and season with salt and pepper as desired. Serve warm.
