Vegetable Stew

  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 3 medium carrots diced
  • 2 medium potatoes diced
  • 1 medium zucchini chopped
  • 1 cup squash chopped
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon thyme dried
  • 1 teaspoon rosemary dried
  • to taste salt
  • to taste black pepper

Instructions
 

Prepare Ingredients

  • Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until fragrant and onion becomes translucent.
  • Add carrots, potatoes, and zucchini, stirring occasionally for about 5 minutes until they begin to soften.
  • Pour in diced tomatoes and vegetable broth, then stir in chopped squash. Add thyme and rosemary, and bring to a boil. Reduce heat, simmer for 25-30 minutes until vegetables are tender.
  • Taste and season with salt and pepper as desired. Serve warm.
