Beef Stew Ingredients
- 2 pounds beef chuck cut into 1-inch cubes
- 1 large onion diced
- 3 cloves garlic minced
- 2 tablespoons olive oil
- 1 cup red wine optional, for deglazing
- 1 tablespoon tomato paste
- 4 cups beef broth low sodium
- 3 large carrots sliced
- 3 large potatoes diced
- 2 cups kale chopped
- 1 teaspoon salt adjust to taste
- 1/2 teaspoon black pepper
- 2 sprigs fresh thyme for garnish
Preparation
In a large pan, heat olive oil over medium-high heat. Add beef and brown on all sides. Remove beef and set aside.

In the same pan, add onions and garlic. Sauté until onions are translucent. Add tomato paste and red wine to deglaze the pan.

Transfer beef, sautéed aromatics, carrots, potatoes, and beef broth to a slow cooker. Stir to combine.

Cover and cook on low for 3-4 hours until the beef is tender and the vegetables are cooked through.
Stir in chopped kale and allow to cook for an additional 15 minutes.
