Ingredients
  

Pasta

  • 300 grams Rotini Pasta or Fusilli

Vegetables & Meats

  • 1 cup Red Bell Peppers diced
  • 2 pieces Green Chilies sliced
  • 200 grams Cherry Tomatoes halved
  • 100 grams Pepperoni thinly sliced

Dressing

  • 3 tablespoons Olive Oil
  • 2 tablespoons White Wine Vinegar
  • 1 teaspoon Crushed Red Pepper Flakes adjust to taste
  • 1/2 teaspoon Garlic Powder

Garnish

  • 2 tablespoons Fresh Parsley chopped
  • 50 grams Grated Parmesan

Preparation

  • Cook your choice of pasta until al dente. Drain and cool under cold water. Set aside.

  • In a large bowl, combine diced red bell peppers, sliced green chilies, halved cherry tomatoes, and sliced pepperoni. Toss together.

  • Mix olive oil, white wine vinegar, crushed red pepper flakes, and garlic powder. Pour over salad, tossing gently.
