Main Ingredients
- 2 tablespoons olive oil For sautéing
- 1 whole onion Chopped
- 2 cloves garlic Minced
- 2 whole carrots Diced
- 2 whole potatoes Diced
- 1 whole bell pepper Chopped
- 1 cup sliced mushrooms
- 1 whole zucchini Chopped
- 1 can diced tomatoes 400g
- 4 cups vegetable broth
- 1 teaspoon thyme Dried
- 2 teaspoons smoked paprika
- 1 teaspoon cayenne pepper
- crushed red pepper flakes Hint for extra heat
Preparing the Ingredients
Heat olive oil in a large pot over medium heat. Add the onion and garlic and sauté until the onion is translucent and the garlic is aromatic.
Stir in the carrots, potatoes, and bell pepper, cooking for about five minutes until they begin to soften.
Add the mushrooms and zucchini, mixing them thoroughly with the other vegetables. Pour in the diced tomatoes and vegetable broth, and then stir in the thyme, smoked paprika, cayenne pepper, and crushed red pepper flakes.
Bring the stew to a boil, then reduce the heat and let it simmer for 25-30 minutes until the vegetables are tender and the flavors meld together nicely. Season with salt and pepper to taste, and enjoy.
